Lotbit's Pork Lauya Recipe - iampinoypiLauya is a traditional Filipino stew, typically made from pork meat. Beef lauya is an alternative where beef is used instead of pork meat. It is thicker, more robust and flavorful than the original dish.
It is delicious to eat with hot broth especially when the weather is getting cold. Of course in the Philippines the weather is mostly warm and humid as a tropical country this is what we have, but Filipinos still enjoy eating with soup especially Lauya. You can find many versions of it especially in different islands of the Philippines because it depends on what vegetables can be bought in the market so the cooking and ingredients of Lauya are different.
Other Versions of Lauya
On other islands in the Philippines, you can see them mixing Lauya with atsuete, maybe they put it to make the soup colorful. Since atsuete has no taste, it will not change the true flavory taste of Lauya soup. Some pinoys also mix red bean with Lauya soup and they even add sampaloc sometimes which is just the same taste of sinigang. Even though it has other names such as Lauya or Laoya, due to the different dialects in the Philippines, it is still one of the favorites or especial soup with beef or pork.
For now, we will use this version of lauya flavoring with lemongrass and Laurel leaves to make it even tastier.
Pork Lauya Recipe
Pork Lauya Ingredients
• 1 kg pork loin (with back fat), cut into serving pieces
• 4 cloves garlic, crushed and peeled
• 1 large onion, peeled and halved
• Small knot fresh lemongrass, about 5 leaves
• 1tsp whole black pepper
• 1 large potatoes, peeled and cubed
• 1 bunch green pechay, halved or whole
• 1/4 to 1/2 slice of a decent size cabbage, bottom cut
• 2 Laurel leaves
• Fish sauce or salt to taste
• 2 ripe saba bananas, peeled and sliced diagonally (optional)
Pork Lauya Cooking Instructions
Place the pork in a large pot and cover it with water. Over high heat, add salt and bring to a boil. Remove any scum that has gathered on the surface, lower the heat to medium, cover the pot, and simmer the pork for 20 minutes, or until it is tender to the fork. As necessary, add extra water.
Add Potatoes, garlic, onion, laurel, lemongrass, peppercorns, and put to medium heat. Cook for 12 minutes.
• Add the cabbages, pechay, and Black peppers. You can also add the Saba in here if you are incorporating it to your Lauya.
Cook for an additional 3 minutes or until potatoes are soft to the fork before adding
• If necessary, adjust the seasoning by adding salt or fish sauce.
Serve with fish sauce, and steamed rice.
