Paksiw na Isda sa Suka Recipe


I used to eat paksiw na isda when I was living in the province during high school days because our place is just a kilometer away from the ocean. Most of the local people’s jobs in our town are fishermen so almost every hour there are fresh fish that we can buy. The last time I visited our town, I actually asked my brother (locally living there) to buy me some fish for cooking paksiw and I really enjoyed the dish. Now, enough for the story… let us go to our menu, there are actually plenty of fish selections we can use in this recipe but my suggestion is to use those tiny ones as they are tastier for the recipe. Please find below the ingredients for Paksiw na Isda sa Suka.


Estimated preparation and cooking time: 25 minutes


Paksiw na Isda sa Suka Ingredients:
· 1/2 Kilo Fish (Hasa-hasa) cleaned

· 1/2 bulb of garlic, peeled and minced

· 1 medium size onions, minced

· 1 medium size tomato, sliced in 4 parts

· 3 large chili / siling berde (optional)

· 1 thumb-sized ginger, pounded then sliced

· 2 Tablespoons vinegar (Sukang paumbong or any vinegar you like)

· 3 Tablespoons water

· Salt and pepper to taste


Cooking Instructions:
1. In a cooking pot, combine the major ingredients, first the fish, and the rest of the ingredients except the water and the chilis.

2. Keep the pot in a low fire for 10 minutes until the vinegar is soaked by the fish.

3. Add the water and the chili and cook for another 3 minutes in medium heat.

4. Add salt if necessary and serve with steamed rice.

Chicken Curry Recipe

Last night I was dreaming about eating in arestaurant and I can’t remember the name of the recipe that I ordered but itwas made with coconut and it is spicy. When I woke up I suddenly thought that maybe gutom lang yun! Hehehe butsuddenly I realized that maybe my readers would want to have a recipe withthose ingredients so I decided to post this to you guys. Thus, today we will bepreparing a Chicken Curry Recipe.  Let usget started and head to the kitchen for our menu’s ingredients and preparation.

Chicken CurryRecipe

Estimated cookingtime: 40 minutes

Chicken Curry Ingredients:
·    1 Kilo chicken cut to pieces
·    2 to 3 pieces of potatoes,quartered
·    2 to 3 pieces of carrots, cut topieces
·    1 big red bell pepper cut into1"x1" squares
·    1 big green bell pepper cut into1"x1" squares
·    2 mid-sized onions, chopped
·    1 bulb of garlic, minced
·    1 thumb-sized ginger, poundedthen sliced
·    2 cups coconut milk
·    2 to 3 tablespoons of currypowder
·    1 teaspoon chili powder or mincedchili (optional)
·    4 tablespoons cooking oil
·    Salt and pepper to taste

CookingInstructions:
1. In frying pan or wok, fry the cutchicken until light brown. Next, fry potatoes and carrots, set aside.
2.  In a sauce pan, sauté garlic,onions and ginger in cooking oil for 2 minutes.
3.  Add the chicken, coconut milk,curry powder and chili powder. Simmer for 10 minutes.
4.  Add potatoes, carrots andcontinue to simmer for another 5 minutes or until tender.
5.  Add red and green bell pepper,salt (about 1 tablespoon) and pepper to taste.
6.  Serve hot with steamed rice.
CookingNotes:
·    Coconut milk may be canned fromthe grocery store. When using fresh coconut, milk grated coconut meat with 1/2cup of water, then set aside. Again, milk the grated coconut milk for thesecond time using 1 1/2 cups of water. While cooking, use the 2nd milkingfirst, then add the 1st coconut milk near then end of cooking -just afterputting the potatoes and carrots.
·    Use fish sauce (patis) insteadsalt when available.

Tinolang Manok Recipe (Pinoy)



Good morning kabayan, I know how its hard to plan for the food everyday, because of the hectic schedules at work and rapid increase of the prices of commodities we want sometimes to cook a recipe that will have veges, soup, and meat at the same time.  So today, in your plan for a lunch recipe, better try to prepare Tinolang Manok.

This recipe is very delicious and easy to prepare. If you want healthier recipe for this kind, you can opt to remove the skin of the chicken and remove some fats on the meat. Of course it will decrease the original taste of the chicken but for senior citizens I think this is advisable.  So let us get started.  Please find the ingredients below for Tinolang Manok.

Tinolang Manok Recipe

Estimated cooking time: 45 minutes

Tinolang Manok Ingredients:
·    1 kilo whole chicken, cut into pieces.
·    1 small young papaya or sayote, cut into small pieces.
·    2 tablespoons ginger, crushed and slliced into strips
·    1/2 cup dahon ng sili (chili leaves) or mallunggay leaves
·    1 liter of water
·    5 garlic cloves, minced
·    1 red onion, diced
·    4 tablespoons oil
·    2 tablespoons patis (fish sauce)

Cooking Instructions:

1. In a stock pot, heat oil and sauté garlic, onion and ginger.
2.  Add water and the chicken.
3.  Bring to a boil and simmer for about 20 minutes or until chicken is almost done.
4.  Season with patis
5.  Add papaya and continue to simmer for an additional 5 minutes or until papaya softens but not overcooked.
6.  Add sili leaves then turn off the heat.
7.  Serve steaming hot on a bowl with plain rice on the side.

Roasted Chicken Recipe


Kabayan, I hope you enjoyed our previous recipes here in our site, today we will add to your list the Roasted Chicken Recipe. Some of the good things about this recipe are its few ingredients and it is healthier because we need to bake the chicken and it will definitely remove some fats on the meat.

Though it will take approximately 2 hours in total preparation and cooking but of course since this recipe is cooked in oven you can still do other house chores while doing this food done at the same time.  So bring out that chicken and let us get started.  Please find below the ingredients for this recipe.

Roasted Chicken Recipe

Estimated cooking time:  Approximately 2 hours

Roasted Chicken Ingredients:
·    2 kilo dressed chicken (broiler)
·    2 cups of lemon grass (tanlad)
·    3 tablespoons of cooking oil
·    2 tablespoons of salt

Cooking Instructions:
1. Make sure the chicken is clean with no remaining small feathers and no insides.
2. Wash thoroughly and pat dry with a paper towel
3.  Rub the whole chicken with cooking oil as well as the inside cavity.
4.  Next apply salt all over, again, including the insides.
5.  Fill the cavity with lemon grass
6.  Pre-heat oven to 400 degrees Fahrenheit
7.  Place the chicken on an oven rotisserie.
8.  If you don't have a rotisserie put the chicken on an elevated rack on a baking pan - breast side up (so the bottom of the chicken does not touch the baking pan).
9.  Bake for 1 hour or until the chicken is golden brown. When you prick between the chicken thigh and body and the juice runs clear (not bloody) the chicken is done.
10.    Serve with mashed potatoes, rice or corn on the side.
Note:
If baking at 325 degrees Fahrenheit, bake for 1 1/2 to 2 hours in the oven.

Coconut

Coconut can be found almost all over the Philippines and most of Pinoys are using coconut in cooking pinoy food recipes. According to studies, Coconut is rich in trace minerals including manganese which is essential in metabolism, healing and collagen formation, copper which plays a role in immunity and bone health as well as selenium, a nutrient which is critical to thyroid function as well as developing healthy skin, nails and hair. 
The coconut milk is used in many different cuisines and delicacies or "kakanin" such as bibingka, Suman, Ube-Halaya and many more. Also, coconut milk is used as an ingredient for veges too such as "Laing, Kinunot, Langka, Kalabasa. To make coconut milk, the coconut must be split into two by smashing it with a hammer or mostly some pinoys in the market are using "bolo" to open the cocount, then it will be grated (there are machines in the market that is used in grating coconuts), and then the grated coconut will be added with preferred amount of warm water. Then Pour coconut mixture through a net or nut milk bag into any jar or pitcher and then squeeze out as much liquid as possible.

Banana Cue


I really loved banana cue, I know most of you liked this too.  Pinoys enjoyed eating banana cue because it is very delicious and this is our all-time favorite snack.  Banana cue is cooked using "Saging na Saba", it is deep fried and coated with caramelized brown sugar. It is usually skewered on a bamboo stick, and is sold on the streets. The perfect match for Banana cue is to have some "samalamig" (a sweet drink made of water, vanilla extract, and cubed gelatin), sarap talaga.

The Philippine National Anthem:


Lupang Hinirang is the national anthem of the Philippines. Its music was composed in 1898 by Julián Felipe, with lyrics in Spanish adapted from the poem Filipinas, written by José Palma in 1899.

Originally written as incidental music, it did not have words when it was adopted as the national anthem of the Philippines and subsequently played during the proclamation of Philippine independence on June 12, 1898. During the American occupation of the Philippines, the colonial government banned the song from being played with the passage of the Flag Law.[1] The law was repealed in 1919 and the song was translated into English and would be legalized as the "Philippine Hymn". The anthem was translated into Tagalog beginning in the 1940s. A 1956 Pilipino version, revised in the 1960s, serves as the present anthem.
Lupang Hinirang in Filipino or Tagalog means "Chosen Land" in English. Some English sources erroneously translate Lupang Hinirang as "Beloved Land" or "Beloved Country";[2][3] the first term is actually a translation of the incipit of the original poem Filipinas (Tiérra adorada), while "Beloved Country" is a translation of Bayang Magiliw, the current version's incipit (and colloquial name). - wikipedia.

Bicol Express Recipe


I would like to share with you guys this very renowned recipe of Bicolanos and this is their signature food. If you will hear this recipe, the very first thing that will pop-up in your mind is spice.  This recipe is bicolanos pride, although nowadays there had been lot of changes on the ingredients of this cuisine because most of pinoys from other provinces are also cooking this recipe in a different twist.  However, whatever kind of preparation and procedures they prefer, it will still end in Bicol Express’ feature as spicy.
Now let us start the way this food is prepared. This recipe have a little twist on ingredients, but don’t worry we will post here some other time the original bicolano recipe. I listed below some of the ingredients for the recipe.  Prepare your chopping board and the knife to spread the spice on the pan.

Bicol Express Recipe:

You will spend approximately 1 hour for this recipe
Estimated preparation time: 30 minutes
Estimated cooking time: 30 minutes

Bicol Express Ingredients:
  To cook bicol express, you will need the following:
1/4 kilo pork, (thinly sliced) you can choose either pure meat or with little bones
1 cup Baguio beans
3 cups long chili or add some siling labuyo
1 head of garlic, minced
1 onion, minced
1 cup coconut cream (kakang gata)
1 cup coconut milk (2nd base of kakang gata with addded water)
2 tablespoons of cooking oil
Salt to taste

Bicol Express Cooking Instructions:
1. In a bowl of water with salt, soak chili peppers for 30 minutes then rinse and strain.
2. In a cooking pan, heat cooking oil and brown sliced pork for a few minutes.
3. In another pan, sauté minced garlic and onion.
4. Add to the sauté the browned pork.
5. Then add the coconut milk, bring to a boil and simmer for 10 minutes.
6. Add the chili peppers, Baguio beans and cook until dish gets a little dry.
7. Add the coconut cream and simmer until the sauce thickens.
8. Salt to taste.
9. Serve hot, and enjoy the Bicol Express with plain rice.

I really loved to ride in a jeepney because aside from it's economical it is also a pinoy pride.  While on a jeepney you can hear different horn sounds from traditional pot-pot to a funny ones (laughing man).  Some jeepneys have woofer speakers that will make you feel like you are in a disco house.  Some have ropes on a ceiling connected to the driver's gadget that when it is pulled, it will signal the driver to stop the jeepney. There are lots of patterns of prints and designs that you can see at the side of the jeepney.  Nowadays, some of the jeepneys are equipped with airconditioning unit. Truly Pinoy.

Chicken Barbeque Recipe


I know you guys like barbecue because it is not only healthier but it is also delicious. Most of the barbecue recipes are actually prepared simple, you can just use salt and pepper and your barbecue will already have a perfect taste. But what if we want something which we can prepare for any celebration or party, of course we want to add some ingredients which will make our recipe saucier.

I don’t want you to wait so long for our barbecue recipe, let’s get to the work now. You will only need to prepare these ingredients below:


Estimated cooking time excluding preparation: 30-45 mins.

Chicken Barbeque Ingredients:

· 1 kilo chicken (whole or cut in pieces)
· 1 cup soy sauce
· 1 head garlic, minced
· 1 onion, finely chopped
· 3 tablespoons of calamansi juice or lemon juice
· 1/2 cup of sprite, 7up or beer
· 2 cups of tanglad (lemon grass) for whole chicken
· 1 teaspoon ground black pepper
· 3 tablespoons of brown or white sugar


Preparation & Cooking Instructions:

1. Marinate the chicken in soy sauce, calamansi juice (or lemon juice), minced garlic, chopped onions, soda or beer, sugar and pepper.

2. Marinate in the refrigerator for 1 to 3 hours.

3. Stuff the chicken cavity with tanglad (lemon grass) if to be grilled whole.

4. Cook chicken on grill or in oven until golden brown

How to Cook:

1. To barbeque chickens that are cut into pieces, follow the same procedure above but leave out stuffing the leg with lemon grass. Thread the chicken pieces on barbeque skewers and grill on live charcoal until cooked.

2. To check if the meat is cooked, slice a small piece of meat off and if there are no juice running off the meat and there no reddish (blood) areas on the inside of the meat, the chicken is cooked.

3. Enjoy this delicious chicken recipe with family and friends!
