The Palitaw is one of the favourites of the Filipinos. Not only is it delicious, it is also quick to prepare and cook. Very few ingredients are used here, so it is also cheap to make this recipe. You just have to know how to mould glutinous rice flour flat and round so you get the right palitaw size. That is why it is called palitaw because when the dough is cooked, it appears on the surface of the boiling water.
Normally the Palitaw dough is molded manually using the hand. If you want the dough to be flatter to cook, it is better that you use a dough roller. But remember that glutinous rice is very viscous compared to regular flour, so it can stick to the dough roller. You will find it a little harder to flatten the dough by using a dough roller if the glutinous rice sticks. If this is the case, use a wrapping sheet over the dough before using the roller.
If you want your dough to have a design, you can use a shape cutter. Such as circle and square shapes, or even stars. But normally, the Palitaw is oval when cooked. Maybe if the dough is used in a different shape, it will still have a little deformity when it is cooked because the dough will be boiled in water.
It's simple to make a Palitaw. You will only need these ingredients:
1. Place the glutinous rice flour in a bowl.
2. Bring 3 cups of water to a boil in a pot.
3. Slowly add water and mix the flour until the flour becomes thick. It doesn't need to be too thick. The flour should just look damp and be rounded. Set aside another plate with drizzled flour.
4. When the water boils, add the rounded glutinous rice dough one by one.
5. Once the dough has floated on the boiling water, cook it, remove it, and place it on a separate plate. It is better if you just put banana leaves on the plate before putting the cooked trigger dough on it.
6. Place the sesame seeds in a pan over medium heat and drizzle with a little oil. After 1 minute, just reduce the heat and continue to mix until golden brown. Place on a separate plate and set aside.
7. Finely grate the coconut.
8. On a plate with cooked palitaw dough, sprinkle it with coconut, then sugar, then sesame seeds. It's up to you to add sugar and sesame seeds as you want.
9. Serve while still hot. Enjoy the Pinoy Palitaw.
